Mouthwatering Mashed Potatoes
1 lb. medium red potatoes (about 4); peeled and halved
1/2 C low sodium vegetable or chicken broth
1/2 C water
2t butter
1/4t salt
pinch of freshly ground black pepper
1/8t garlic powder
1/2 C 1% milk
1. Place potatoes, water and broth into a medium sized pot, cover and steam over medium heat until soft, about 25 minutes. Stir occasionally. (note: since you are steaming, the liquid will not cover the potatoes. Add additional broth as needed)
2. Turn off the heat and mash potatoes in the pot with a potato masher or whip in a stand mixer. Do not drain!
3. Add butter, salt, pepper, garlic powder and milk and continue mashing until desired consistency, adding more milk as needed.
4. Enjoy!
