
Fiery Chicken Bites & Dipping Sauce
Fiery Marinade (Serves 4-6)
2 tablespoons olive oil
3 tablespoons of hot sauce
1/4 cup water
1 tablespoon freshly squeezed lemon juice
1/2 cup rice wine vinegar
1. In medium saucepan heat hot sauce in olive oil for about 3 minutes.
2. Add remaining ingredients and simmer for about 10 minutes.
3. Let cool slightly.
1 lb. boneless chicken breasts; lightly pounded
1. Place chicken and 1 cup Fiery Marinade in zip lock bag and marinate for at least 3 hours….the longer the better!
2. Remove chicken from marinade and grill until done (about 5 minutes per side).
3. Pour some marinade on top before turning.
4. Remove from grill and chop into bite-sized pieces.
5. Serve with 2 tablespoons Creamy Dipping Sauce (page 96) and vegetable stalks.
Dipping Suace (Serving Size 1/4 cup)
1/2 cup reduced fat sour cream
1/4 cup reduced fat mayonnaise
1/4 cup blue cheese (about 2 ounces)
1 tablespoon freshly squeezed lemon juice
Lots of freshly ground black pepper
2 teaspoons dried dill
2 teaspoons dried chives
2 teaspoons dried basil
1 teaspoon garlic powder
Combine all ingredients together until fluffy. Store in refrigerator.
