
Baked Fruit with Frozen Yogurt
Filling:
3 cups thinly sliced apples
1 mango - scored & separated
1/2 cup sliced strawberries
1/2 cup blueberries
1/2 cup diced pineapple (fresh or frozen)
2 teaspoons fresh lemon juice
Topping:
3 tablespoons all-purpose flour
1 tablespoon brown sugar
1/2 cup quick cooking oats
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
2 tablespoons butter
2 cups Low-fat vanilla frozen yogurt
3 tablespoons pure maple syrup
1. Preheat oven to 425°.
2. Combine fruit (you can use any of your favorite fruits) and lemon juice together. Spoon half of mixture in to 8” x 8” x 2” metal or foil pan.
3. In separate bowl combine flour, brown sugar, oats, cinnamon, nutmeg and ginger. Stir well.
4. Cut in butter with pastry blender until mixture resembles coarse crumbs.
5. Sprinkle half of mixture evenly over fruit mixture. Add remaining fruit and sprinkle other half of mixture on top.
6. Cover pan tightly with foil.
7. Bake about 45 minutes.
8. Remove cover and bake additional 20 minutes.
9. Spoon approx. 1 cup fruit into small bowl.
10. Top with 1/4 cup yogurt and drizzle 1 teaspoon syrup on top.
